La Courailleuse
Absinthe is a very bitter herbal spirit scientifically called 'Artemisia absinthium' '. The Courailleuse we produce is also flavored with anise and fennel, which gives it a taste of licorice. This is a real absinthe made with authentic ingredients used in 1850. The 72% alcohol by volume has its reason. It is an interpretation of original absinthe. At the time the green absinthe was colored by maceration of grass (small absinthe wormwood, hysopes, lemon balm and others). In fact, this is the green chlorophyll of plants used in its manufacture. For this colour to stabilize, its content must be 70% or more of alcohol by volume.

The Courailleuse earned a bronze medal at the "International Spirits Challenge" in London, UK and a silver medal at the "San Francisco World Spirits Competiton".
